The coffee is harvested in the high plateau of Antigua and its surroundings, known as one of the most famous and best coffee areas in the world. Thanks to the peculiar microclimate, its volcanic natural fertilizers and the dedication of the planters to their product provide this unique taste of Pastoral. This excellent coffee comes from a cooperative, which consists of more than 500 small planters. After a careful harvesting the cherries are delivered for the process of wet coffee mill which works under strict control and measures. Afterwards the parchment is subjected to the dry coffee mill where all the elements of man and machine are combined to classify the color, size of the bean and finally the taste of the coffee.
